The Provenance of our Food
Our fish is from M&J Seafood and comes from such places as Swansea and the Cornish coast for crayfish and scallops, Oxwich Point for Sea Bass and Broad Haven and Milford Haven for oysters; their day boats and beamers go out from such places as Newlyn on the South coast of the Penwith Peninsula and the Gower Peninsula and brought back to market in Swansea. South Coast fish is generally of a better quality than other parts of the U.K. due to its' warmer waters. All our fish is largely line caught.
Our meat is sourced locally through Cig Calon Cymru in Crosshands - Carmarthenshire and our game comes from the Brecon Beacons. Lamb varies due to its availability; we source Brecon Cheviot, Hill Radnor and Llanweg largely from local farmers in Redbrook, Cardigan and Raglan. We sometimes use Welsh Black Mountain lamb (also known as badger face or Torddu, which is welsh for "black belly") but this is a much slower producer and will not be available until a little later in the lambing season. Beef is invariably Welsh Black Beef from Cig Calon Cymru (whose shop was opened in 2005 by Prince Charles); it is culled between 15 and 26 months and dry aged for a minimum of 21 days. The cattle are largely from Carmarthenshire and Brecon and are grass fed in the summer and fed on silage during the winter months.
Our cheeses are both British and Continental and we use a lot of local products such as Celtic Promise from Dyfed, Teifi from Ceredigion, Perl Las, Pant ys Gawm from Abergavenny, Perl Wen from West Wales, as well as Epoisses from Burgundy and Manchego from La Mancha region of Spain.
Our fruit and vegetables are provided by Reynolds from Bristol, he sources his produce from local farmers around the area as well as Cardiff market, we have also just taken on a very exciting new supplier specializing in rare cresses and salads that are all hand picked and not force grown. Some of our more obscure products are to be found at Rungis Market in Paris.
